Junmaishu Yaegaki 750ml

- Price: £9.99 inc VAT 15%
- Brewed in the USA, this junmaishu is made strictly in accordance with the original Yaegaki method. It offers a crisp and dry taste with a rich bouquet.
- Alcohol: 15-16%
- Seimai-buai (Milling rate): 60%

- Acidity: 1.5-1.8

This type of sake is created from only the ingredients of rice, rice "koji", and water,
and is one of the different sake types with a special name.
The rice polishing ratio is defined as 70% or less.
Generally speaking, there are many dark types.

The deep sea water used in Azure is sourced from a natural spring at the bottom of the North Pacific ocean near the Tosatsuru brewery. This healthy mineral water is famously free from pollution, and the brewery has spent a long time researching how to best use this precious resource in order to produce a special ginjoshu. The final product comes as a result of countless trials; a new kind of ginjoshu with a smooth, clean taste and a light refreshing finish.

Rice polished 40% or more is used for the material, with the alcohol made by fermentation for a long period of time at low temperature; it is one of the special name "sake". Advanced technologies are necessary and high production costs are involved.With a brilliant fruity aroma like apples and bananas, it is delicious when served cold.

Pure mineral-rich river water is drawn from wells within the brewery and a range of top sake rices are used, including Yamada Nishiki. In the making of the brewery's daiginjoshu, the rice is polished to the maximum possible degree, to around 30% of its original size. Long-serving chief brewer Kenshi Ikeda's passion for producing the finest sake has only increased over the years and his uncompromising, strict training has created a younger generation of equally committed brewers. Ikeda’s success is demonstrated by the record 32 National New Sake Tasting Awards the brewery won up to 2005. Tosatsuru aims to produce sake which transcends passing fashion and captures people's hearts.

Although this is the most reasonably priced of the Dassai sake range that the brewery produces, there have been no compromises made in the care and attention taken in its brewing. The combination of Yamada Nishiki and Omachi rice polished to half its original size produce superb quality. This is a sake to be enjoyed in a lively atmosphere with friends.

Junmai daiginjoshu
A subclass of junmai ginjo-shu, brewed with very highly polished rice (up to at least 50%) and even more precise and labor intensive methods. The pinnacle of the brewers' art. Generally light, complex and fragrant.

Although it is a relatively small brewery, producing just over 180,000 litres of sake annually, it uses as much as 240 tonnes of rice or more a year, which highlights the fact that much of the grain is milled away to produce a premium quality drink. Asahi Shuzo is a brewery specialising only in the very highest grade junmai ginjoshu and junmai daiginjoshu, with the rice used being highly polished to an average of 43% of its original size. In addition, 95% of the rice used is Yamada Nishiki, commonly referred to as the king of sake rices. The other 5% is Omachi rice, which others claim to be Japan's outstanding sake rice. The brewery's reputation is unsurpassed: recently, a respected Japanese gourmet magazine judged Asahi Shuzo's flagship Dassai Migaki Niwari Sanbu to be the number one Japanese sake.
